Instructions
Start by layering the following ingredients in a large salad bowl: Cucumbers, peppers, onions, and olives. Give the ingredients a quick toss.
If you are going to be serving the salad immediately, continue on. Otherwise, cover the bowl and refrigerate the ingredients until you are ready to serve the salad.
In a small bowl, whisk together the dressing ingredients until blended (olive oil, red wine vinegar, dijon mustard, and seasonings).
Pour half of the dressing the over the ingredients in the bowl and toss with the other ingredients.
Add the tomatoes and then the remaining dressing and toss again.
Top with the cheese and any optional toppings and seasonings.
