Ingredients

  • 1 cup Cucumber -Peeled or washed and then sliced thin.
  • 1 Green Bell Pepper -stem and seeds removed, sliced.
  • ½ cup Onion -Red onion works best in this recipe. Your onion should be sliced thin.
  • ½ cup Olives -Kalamata or black onions, pits removed and sliced as desired.
  • 2 cup Tomatoes - cherry or grape, sliced in half
  • ½ cup Feta cheese - Crumbled into small pieces.

Dressing

Optional Toppings- Fresh herbs such as oregano, parsley, or mint. Optional add-ins include minced garlic, sliced red bell pepper, and capers

    Instructions

    • Start by layering the following ingredients in a large salad bowl: Cucumbers, peppers, onions, and olives.
      Give the ingredients a quick toss.
    • If you are going to be serving the salad immediately, continue on. Otherwise, cover the bowl and refrigerate the ingredients until you are ready to serve the salad.
    • In a small bowl, whisk together the dressing ingredients until blended (olive oil, red wine vinegar, dijon mustard, and seasonings).
    • Pour half of the dressing the over the ingredients in the bowl and toss with the other ingredients.
    • Add the tomatoes and then the remaining dressing and toss again.
    • Top with the cheese and any optional toppings and seasonings.
