Flour- 2 ¼ cups. Using whole wheat flour is one more way to make these cookies even more friendly to the Mediterranean diet.

Baking Soda- 1 teaspoon.
Olive Oil – ¾ cup. I prefer an extra virgin olive oil that is not overly bold in taste.
White Sugar- 1 cup. If using an alternativesuch as a natural sweetener like stevia. Please read the label on your sweetener to get an idea how much to use, or measuring equivalence when compared to sugar (use a granular alternative for best results.)
Brown Sugar- ½ cuppacked. Just as with the white sugar alternative, please read the label on your brown sugar alternative .
Eggs-2.
Vanilla Extract- 1 ½ teaspoons.
Chocolate Chips- 2 cups. You can see some ideas for chocolate chips without sugar added to them here.
Instructions
Preheat your oven to 350. Prep your cookie sheet for nonstick. I use parchment paper.
In a medium bowl, whisk together the flour and baking soda.
Next, in a mixing bowl, mix together the olive oil and the sugar. This will result in a thinner, yet still kind of cream like, consistency unlike a regular butter and sugar batter which is creamy. Next add the eggs, one egg at a time, stirring between additions.
Add the dry ingredients, ½ at a time, to the mixing bowl, stirring gently between additions. On the second addition, also add the vanilla extract.
Fold in the chocolate chips by hand.
Bake these cookies for 10-12 minutes or until they begin to brown. Please note that this will be somewhat softer in the middle than regular chocolate chip cookies. However, this seems to please people, such as myself 🙂 .

As mentioned, when choosing an olive oil, the taste of olive oil can range from kinda bland to bold and fruity.
