Carrots- two poundsabout 14-16 average sized carrots. Have your carrots scraped and sliced lengthwise in half. You can leave the ends on for roasting.
Olive Oil– 2 tablespoons.
Honey– 2 tablespoons.
Salt/pepper- to taste and can be omitted.
Salt Free Seasonings – 1-2 teaspoons. Good choices include thyme or rosemary.
Instructions
This is one of those recipes in which a blackened (older) baking sheet works especially well with. You can give yours a quick nonstick spray squirt if you would like to. Also, preheat your oven to 400.
On you baking sheet, lay out the carrots sliced side down. The sliced side is flat and will thus stay in place better than the rounded side.
Evenly disburse the honey over the carrots. You can use a spoon to drizzle the honey to do this. Cover the carrots as evenly as possible including the underside.
Now, in small bowl, whisk or use a fork to mix together the oil and the seasonings. Then pour this mixture over the carrots.
Roast your carrots until they begin to brown and seem to caramelized. This should be about 30-35 minutes.
Season as desired and serve.

n order to balance out the sweetness potential of this recipe, we will add a bit of seasoning to taste. Adding a teaspoon of salt is one way to balance out the sweet taste of these carrots. However, there are some great salt free seasonings that would work great in this recipe.
