Cauliflower Mashed 'Potatoes'

This easy and delicious recipe for Cauliflower Mashed 'Potatoes' is the perfect (healthy and low carb) side dish for your next meal!

Ingredients

  • Cauliflower- 1 medium head.
  • Garlic- Six cloves to one head. Personally I like my garlic 🙂 .
  • Olive Oil – 2 ½- 3 tablespoons depending on how much garlic you are using.
  • Optional- Greek Yogurt or Cream Cheese- 1-2 tablespoons for consistency and taste.
  • Optional- seasonings as desired. Try using Italian Seasonings Salt,
  • and/or Pepper.
  • Optional- Grated Parmesan Cheese– 1-2 tablespoons for topping.

Instructions

  • Prepare your cauliflower as described above. Remove the outer leaves and cut off the stem. Then place it in a pot of boiling water for 5 ½- 6 minutes or until tender. You will then need to drain the cooked cauliflower and pat it dry with paper towels.
  • Meanwhile, roast the garlic as described above. Start by preheating the oven to 350 and lining a baking sheet with aluminum foil . Crush the garlic and place it on the baking sheet then drizzle some olive oil over the garlic and roast until tender (12-15 minutes).
  • Use a food processorimmersion blender or Vitamix. Puree the warm cauliflower with the other ingredients until you reach your desired consistency. Add any optional ingredients as needed.

Recipe Notes

As mentioned, to prepare your cauliflower for this recipe. To cook it simply place it in a pot of boiling water for 5 ½- 6 minutes or until tender.You will then need to drain the cooked cauliflower and pat it dry with paper towels.
