Mediterranean Diet Friendly Chocolate Cake

This Mediterranean Diet Friendly Chocolate Cake is simple to make and delicious to eat. This cake is also vegan and vegetarian diet friendly.

Ingredients

  • All Purpose Flour– 1 ½ cups.
  • Baking Soda– 1 teaspoon.
  • Unsweetened cocoa powder – ¼ cup about four tablespoons.
  • Sugar– ¾ cup.
  • Olive Oil – ⅓ cup. Can use other Mediterranean diet friendly oil such as canola oil flaxseed oil, or sunflower oil.
  • Vanilla Extract– 1 teaspoon.
  • White Vinegar– 1 tablespoon.
  • Water- 1 cup cold.

Instructions

  • Preheat your oven to 350 and prep a cake pan well for nonstick.
  • In a mixing bowl , sift or whisk together the flour and baking soda.
  • Next in another mixing bowl, whisk together the unsweetened cocoa powder and sugar.
  • Gently (do not blend in) stir in the oil into the first mixing bowl with the flour.
  • Now, in the second bowl, gently stir in the vanilla extract and the vinegar.
  • Transfer the contents of both bowls to a large mixing bowl. Add the water and beat the ingredients together.
  • Bake your cake for 30-35 minutes or until a toothpick comes out clean. Allow to cool before serving.

Recipe Notes

As mentioned, this cake is made with All Purpose Flour.
There are more Mediterranean Diet friendly flours that you can alternatively use such as Whole Wheat Flour or many Semolina Flour products . Please check the packaging to assure that the flour that you choose to use measures 1:1 with all purpose flour. Also, using a flour other than all purpose flour can, and most likely will, affect the texture of your cake.

This cake is also made with sugar.

Making this cake using a sugar alternative to sweeten it is possible. However, please use a granular sugar alternative that measures 1:1 with sugar. This will help keep your dry to wet ingredient ration intact. Also, bake your cake the cake at 325 for 35 to 40 minutes. Read the label on the product that you choose to make sure that it is suitable to use in a recipe such as this one.
