Vegan Gluten Free Chickpea Cookies

Ingredients

  • Chickpea flour – 2 cups.
  • Baking Soda– 1 tsp
  • Rolled Oats Old Fashion– ¼ cup.
  • Butter- ½ cup. You can find vegan butter alternatives here.
  • Peanut Butter– ½ cup. You can find organic peanut butter here these are often sugar free too!.
  • Granulated Sugar– ½ cup
  • Brown Sugar-½ cup . I mentioned that you can make this sugar free by using a granular sugar alternative or brown sugar alternative that measures 1:1 with sugar.
  • Egg- 1. Vegan egg alternative – equivalent to 1 egg. Non vegan can use a real egg.
  • Vanilla Extract– 1 tsp

Instructions

  • Preheat your oven to 350. Prep your cookie sheets with Parchment Paper .
  • In a medium mixing bowl use a fork or whisk to mix together the chickpea flour, baking soda, and rolled oats.
  • Next, in a large mixing bowl, cream together the butter alternative and peanut butter with the sugar alternatives. Depending on the alternatives that you are using this may or may not turn out exactly like it would if you were using real sugar and real sugar.
  • For the next step we will add the dry ingredients from the first bowl (chickpea flour etc) to the ingredients in the large mixing bowl (creamed ingredients). Do this by adding half of the dry ingredients at a time, gently stirring between additions. Then stir in the egg alternative and vanilla extract and the.
  • Use a scoop or similar utensil to shape the cookies on the cookie sheets. then use a spatula to flatten the cookies. Be sure to leave plenty of room between cookies when you place them on the sheets.
  • Bake for 10-12 minutes or until they begin to brown. Allow your cookies to cool on the sheets for five to ten minutes to allow them bind together.

Recipe Notes

As mentioned, you will need chickpea flour for this recipe.Chickpea flour is a high protein and fiber alternative to all-purpose flour. Like other gluten free flours (thin almond flour for example) chickpea flour is made from ground up chickpeas.
Also mentioned is that this recipe calls for butter.You can find vegan butter alternatives here. Please note that you may need to adjust the amount that you use as they often melt faster than real butter and can cause your cookies to turn out flat.
Mediterranean diet followers have options for butter alternatives that could work in this recipe whick include nut butters, olive oil (use less than you would butter), mashed bananas (1:1), or unsweetened apple sauce (replace only half of the fat 1:1 with applesauce).
