Peanut Butter and Honey Fudge

This is the best and easiest ever recipe for Peanut Butter and Honey Fudge. Make your fudge a healthier vegan fudge!

Ingredients

  • Peanut Butter- 2 cups.
  • I like the idea of using a sugar free or organic peanut butter to make this fudge. Even better here is how to make your own peanut butter (super easy!).
  • White Chocolate Chips– ½ cup.
  • You can find organic or vegan white chocolate chips here. Even more exciting for me anyway, is that there are now sugar free or keto white chocolate chips available here.
  • Honey– Âľ cup.
  • Vanilla Extract– 1 teaspoon.

Instructions

  • Line a square aluiminum pan with parchement paper that overhangs the sides.
  • Microwave Method- in a microwave safe mixing bowl, stir together the peanut butter with the white chocolate chips. Tip: spray the bowl with nonstick before adding the other ingredients to make for an easier clean up. Microwave on high, stopping every 30 seconds to stir, until the the peanut butter and the chips have melted together.
  • Stove Method- Over medium heat, melt together the peanut butter with the white chocolate chips. A double boiler is not essential for this. However, you should stir the ingredients throughout the melting process. Tip: as with the microwave method, spraying your pan with nonstick before adding the other ingredients can help your clean up process.
  • Both methods, one the ingredients have melted together, stir in the honey and the vanilla extract. Once blended, you can transfer the fudge to your refrigerator to set.
  • To cut the fudge into pieces, simply lift it out of the pan using the overhanging parchment paper to transfer it.

Recipe Notes

I mentioned that you can try using maple syrup instead of the honey in this recipe (although you will need less syrup than you would honey). Also, I mentioned that you can keep this recipe low in sugar or more organic with the peanut butter that you use.

I also mentioned that we will be using white chocolate chips in this recipe to help with the structure.
