Dashi Granules– 3 teaspoons. Dashi granules do contain fish flakes. You can find vegan dashi here.
Water- 6 cups.
Miso Paste– ¼ cup . You can find lower sodium versions of miso paste here.
Tofu- 1 eight ounce packed cut into ½″cubes. Use silken tofu which can be firm or soft. To prepare your tofudrain it and then cut it into ½″ cubes.
Green Onions- ¼ cup diced. That is about two to three average sized green onions.
Optional- ½ cup of kalespinach, wakame, or even prepackaged dried seaweed.
Instructions
In a medium saucepan (3-4 quart) on medium to high heat, bring the dashi and the water to a boil and then reduce it to a simmer.
Use a ladle to remove about a half cup of the broth and transfer it to a small bowl or a glass measuring cup. Use a whisk or a fork to blend in the miso paste.
Next, turn the heat down to low. Add the contents from the cup or bowl from the last step as well a the tofu and any optional ingredients. Allow this to sit for 2-3 minutes and then serve with the diced green onions.
