Baked Carrot Fritters

Ingredients

  • Carrots- 1 ½ cups of grated or shredded carrots. That is about 4 to 4 ½ average sized carrots.
  • Flour- 1 cup all purpose or whole wheat flour or a mix of the two. Make this recipe gluten free by using gluten free flour instead of regular flour. Or you can make this recipe low carb by using low carb Carbalose flour. Make this ‘keto friendly’ by using a keto friendly flour. Please check the packaging to assure whether or not you will need a binder such as an additional egg.
  • Baking Powder– 1 teaspoon
  • Seasonings such as Salt and/or Pepper
  • Eggs- 2
  • Optional- milk almond milk, or water as needed if batter seems to be too thick.

Instructions

  • Start by grating or or shredding the carrots. Place the carrots on a few paper towels or clean kitchen towel to allow them to drain. You can also place them in a colander to help squeeze the liquid out.
  • Preheat your oven to 375. Line a baking sheet with parchment paper or prepare the baking sheet for nonstick.
  • In a mixing bowl , use a whisk or a fork to mix together the flour, baking powder, and seasonings.
  • Add the carrots to the bowl and the eggs. Blend the ingredients together until just mixed. If the batter seems to thick, add a bit of milk or water until you reach a consistency where you will be able to form the fritter patties.
  • Use a large spoon or scoop to scoop fritter batter out of the bowl and form it into a patty. Continue to do this until all of the batter has been made into patties.
  • Bake your fritters for 15 minutes then flip the fritters over and continue to bake until the brown and are done. This should be about 15 to 20 more minutes. Allow the fritters to cool a bit on the baking sheet before serving.

Recipe Notes

As mentioned, to make a more crisp fritter, allow the grated carrots to sit on a few paper towels before adding them to this recipe. This will help drain some of the extra liquid from them which can result in a more crispy fritter.
I also mentioned, that you can make this recipe gluten free or low in carbs.
