Amazing Spinach and Strawberry Salad

This simple and healthy Amazing Spinach and Strawberry Salad can be made vegan, vegetarian, and Mediterranean diet friendly.

Ingredients

  • Spinach- 8-10 ounces. That is around 5-6 cups. Have your spinach washed and allowed to drain. Baby spinach works best.
  • Strawberries- 1 pint. Have the strawberries hulled and sliced in half lengthwise.
  • Apple Cider Vinegar– ¼ cup. Feel free to use another vinegar such as white vinegar or a wine vinegar.
  • Olive Oil – ½ cup. Feel free to use a less flavorful plant based oil such as avocado oil.
  • Honey– 2 tablespoons. You can alternatively use sugar 3-4 tablespoons. Seasonings as desired.
  • Onion- ¼ cup sliced.
  • Feta or Blue Cheese- ¼ cup crumbled. Feel free to add additional as desired.
  • Seeds or nuts- as desired for garnish. Choices can include sesame seeds walnuts, sunflower seeds, poppy seeds, or even almonds.

Instructions

  • Prepare the spinach and strawberries as indicated. That is, clean and drain the spinach and hull and slice the strawberries.
  • In a small or medium bowl, whisk together the vinegar, oil, honey and seasonings. Set this aside or refrigerate until ready to use.
  • Next, when you are ready to assemble your salad, in a large salad bowl, place your spinach and onions and give them a quick toss with a tablespoon of the whisked dressing.
  • Add the strawberries and give the salad a quick toss. Then add the remaining ingredients with the remaining dressing drizzled on top. Please note that you do not have to use all of the dressing if desired.

Recipe Notes

I mentioned that spinach needs to soak in cold tap water to help loosen up the sand from the leaves. Then it can be rinsed and allowed to drain.
Also mentioned above is that the strawberries will need to be hulled (have the stems removed),
To de-stem or hull the strawberries use a strawberry huller to scoop the hull from the strawberry. Alternatively, you can push a straw through the stem to push it out.
