Mediterranean Diet Shrimp in Garlic Sauce

Ingredients

  • Olive Oil-3 tablespoons.
  • Garlic- 5 cloves minced. That is about 5 teaspoons of minced garlic.
  • Shrimp- 1 pound cleaned peeled, deveigned.
  • Lemon Juice- 1 tablespoon.
  • Seasonings as desired- This can include Italian Seasonings Salt, and/or Pepper. Vegetable Broth– ¼ cup divided or additional as needed. Optional- toppings such as chopped green onion and or red pepper flakes.

Instructions

  • Heat the oil with the garlic in a skillet on medium heat, stirring as needed for one minute. Then add the shrimp, lemon juice and seasonings. Cook this for about a minute and then stir in ¼ cup of the vegetable broth.
  • Turn the heat down to low and cook until the shrimp has turned pink, stirring and tossing as needed. This should be about four to five minutes total. Add additional broth as desired or needed.
  • Top with Serve alone or with pasta.

Recipe Notes

As mentioned, depending on the size of the shrimp that your are using, you can use a medium skillet or large skillet to make this recipe.
I also mentioned that the shrimp should be cleaned, as demonstrated bove.
Not over cooking your shrimp is also important in the success of this recipe.
You will know when your shrimp is done when it turns from that gray color of raw shrimp to the pink-white color. It usually only takes a few minutes to cook shrimp. You can avoid getting that 'rubber-like' shrimp by not over-cooking it. Keep an eye on your shrimp while it is cooking to make sure that they do not over cook.
