Banana Wheat Flour Cake

Ingredients

  • Whole Wheat Flour -1 cup. Again I mention if you are looking for a cake that is not as dense, you can easily substitute in regular all purpose flour or even cake flour for half of the whole wheat flour.
  • Baking Powder– 1 tsp
  • Neutral Oil– â…“ cup. Acceptable neutral oils in the Mediterranean diet include avocado oil safflower oil, and Grapeseed oil.
  • Sugar– ¾ cup. Some people like to substitute an alternative for sugar in recipes. If you plan on doing so I would recommend that you use a granular sugar alternative that measures 1:1 with sugar and that can be baked with as well. You may need to add an extra half tablespoon of oil as well to keep the moisture in the cake.
  • Eggs-2. Make this recipe vegan by using ½ cup of unsweetened applesauce instead.
  • Vanilla Extract– 1 tsp
  • Banana- 1 ¾ cups about 3. mashed
  • Optional- You can make this cake even more interesting by adding some chopped nuts. I like the idea of adding a half cup of chopped walnuts to this recipe for example.

Instructions

  • Preheat your oven 350. Prep a round cake pan for nonstick. I like to use Parchment Paper .
  • In a medium mixing bowl, use a fork or a whisk to mix together the flour with the baking powder.
  • Next, in a large mixing bowl, blend together the oil with the sugar.
  • For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring gently between additions. Then add the mashed banana and stir in the eggs and vanilla extract and mix until just blended. Do not over-mix the ingredients.
  • Bake this cake for 35-40 minutes or until a toothpick comes out clean.

Recipe Notes

I mentioned above that because we are using whole wheat flour, this will be a cake that is more dense than most cakes are. However, if you are looking for a cake that is not as dense, you can easily substitute in regular all purpose flour or even cake flour for half of the whole wheat flour.
Also mentioned above is that you will need a neutral oil for this recipe.
Acceptable neutral oils in the Mediterranean diet include avocado oil, safflower oil, and Grapeseed oil.
