Easy Pineapple Salsa

Ingredients

  • Pineapple- 1. Prepare your pineapple by peeling it and then chopping it into 1 – 1 ½ inch pieces bite size.
  • Onion- ¼ cup chopped. I like red onion for this recipe.
  • Red Bell Pepper- ½ cup diced or chopped. Feel free to use ¼ cup red and ¼ cup green or other color pepper instead of all red.
  • Lime Juice– 1 tablespoon.
  • Cilantro- ¼ cup chopped.
  • Optional- hot peppers chili, jalapeno, etc- as desired, chopped.
  • Seasonings as desired.

Instructions

  • Prepare your pineapple as indicated above (remove the skin and chop into bite sized pieces).
  • Also prepare the other ingredients as indicated above (dicing and chopping).
  • In a large bowl (I like a large bowl with a lid), toss together the pineapple, onion, and peppers in the lime juice.
  • Add any desired seasonings and the cilantro.
  • Cover the bowl and refrigerate for at least an hour before serving.

Recipe Notes

Use a fresh pineapple rather than a canned version for this recipe.
When I cut up a pineapple I start by cutting off the top and the bottom first by lying the pineapple on its side.
After you remove the top and the bottom from the pineapple you can cut off the rind or skin.
Slice the remaining meat of the pineapple in half and then half the halves again (four pieces at this point).
Now you can slice the pineapple into one to one and a half inch chunks for this recipe.
Add honey to sweeten this if you find that your pineapple is tart.
