Oven Roasted Tomato Tart

A simple way to make a delicious Oven Roasted Tomato Tart that is friendly to the Mediterranean diet This recipe can be made vegan or vegetarian.

Ingredients

  • Tomatoes- 2 pounds. The amount of tomatoes that you will need to use will really depend upon the variety that you are using and how thin you intend to slice them.
  • Olive oil– ½ cup.
  • Garlic– 3 cloves minced.
  • Seasonings- 1 tablespoon Salt, Pepper and.or Italian seasonings.
  • Crust- 1. Use a frozen puff pastry or phyllo crust. However because both of these rely upon using fat such as butter, strict Mediterranean diet followers can use a crust that is not made with all of that butter or fat such as my Butternut Squash Crust or my Mediterranean diet whole wheat pizza crust (technically not tart crusts).
  • Optional- Cheese- ½ cup. Grated or shredded. Cheeses such as Parmesan Mozzarella, or even Gruyere or a mixture.
  • Optional- for the crust or topping. Prepare or top your pizza with drizzled olive oil pesto , or even a bit of Dijon mustard. I also have a recipe for How to Make Homemade Mayonnaise that is Mediterranean Diet friendly.

Instructions

Oven Roasted Tomatoes needed for this Tart

  • Prepare your tomatoes by slicing them ¼" or less in thickness. Remove as much liquid as possible.
  • We will start this recipe by first roasting the tomatoes. Skip this event if you do not want your tomatoes roasted first.
  • Preheat your oven to 450 and prep a rimmed baking sheet for non-stick.
  • In a medium bowl, whisk or mix together using a fork, the olive oil, garlic, and seasoning. Then toss the tomato slices in the oil mixture. Use a fork to remove each individual tomato slice, allowing the excess oil to drip off back into the bowl. Then place the tomato slice on to the prepped pan. We will use the remaining oil for the tart.
  • Roast the tomatoes for 45-50 minutes or until the the tomatoes begin to brown, flipping them as needed. Allow the tomatoes to cool before proceeding with the recipe.


How to make the tomato tart.

  • Prepare the crust as indicated on the directions suing the baking dish or pan you will use to make your tart. Baking times and preparation will vary depending on the kind of crust that you are using. However, please make sure that you roll out or press your crust so that is is a bit larger than what you are using to bake it in to form a crust.
  • Brush the remaining oil over the crust and then arrange the remaining ingredients over that. Feel free to add additional olive oil or one of the suggested alternative ingredients instead over the crust before you place the tomatoes on top. Drizzle additional olive oil on top as desired.
  • Bake until the tart is browned- about 20-25 minutes. You can sprinkle additional seasonings or olive oil on top before serving.

Recipe Notes

I mentioned that the easiest way to make this recipe is to use a frozen puff pastry or phyllo crust. However, because both of these rely upon using fat such as butter, strict Mediterranean diet followers can use a crust that is not made with all of that butter or fat such as my Butternut Squash Crust or my Mediterranean diet whole wheat pizza crust (technically not tart crusts).
Firmer tomatoes work the best in this recipe.
To prepare the tomatoes, wash them and then slice them into thin slices, remove as much liquid as you can.
This recipe can be made in a tart pan with a removable bottom, pie plate, or on a sheet pan that has been prepped for nonstick (such as parchment paper).
