Easy Avocado Chocolate Mousse

Ingredients

  • Unsweetened Dark Chocolate Chips– ½ cup.
  • Avocado-2.
  • Unsweetened Cocoa Powder– 3 tablespoons.
  • Almond Milk- ¼ cup.
  • Vanilla Extract– 1 teaspoon.
  • Salt- ½ teaspoon.

Instructions

  • Melt the chocolate as described in the post. I mentioned how to melt chocolate chips using the stovetop or microwave methods.
  • Remove the chocolate from the heat and allow it to cool for a few minutes. Meanwhile, you can use a food processor or good blender or an immersion blender and large mixing bowl to blend together the remaining ingredients until about half blended. Then add the melted chocolate and pulse the ingredients until you reach a smooth consistency.
  • Transfer the mousse to glasses (wine, juice, or your favorite) and refrigerate for at least two hours or until set (overnight works!). Serve with your favorite topping such as fruit if desired.

Recipe Notes

I mentioned that this recipe calls for unsweetened dark chocolate chips. Feel free to use the sweetened chocolate chips if you want a sweeter tasting mousse. Another option is to use a sugar free dark chocolate chip.
Also mentioned, this recipe does not include added sugar.
However, there are options for sweetening this mousse if desired. I suggest using a liquid sweetener such as agave nectar, maple syrup, or a sugar free liquid sweetener of your choices that measures 1:1 with agave or maple syrup (you would need to use less honey).
