Ingredients

  • Chicken Breast- 1 pound skinless and boneless.
  • Greek Yogurt- 1 cup plain full fat for best results.
  • Olive Oil– ¼ cup.
  • Lemon Juice– ¼ cup
  • Garlic- 2 tablespoons minced.
  • Oregano– 2 tablespoons dried.
  • Seasonings as desired. This can include Greek Seasoning Salt and/ or pepper

Instructions

  • Prepare the chicken as needed for cooking. This can include cutting or pounding the chicken if desired. Place the chicken in a baking dish, bowl, or large zip top bag for marinating.
  • In a medium bowl, use a whisk or a fork to blend together the remaining ingredients (whisk together yogurt, olive oil, lemon juice or vinegar, garlic, oregano and seasonings).
  • Cover the chicken with the blended ingredients in the marinade. Cover with plastic or seal the bag that contains the chicken. Transfer the chicken to the refrigerator and allow to marinate for at least an hour (overnight works for me).
  • When you are ready to cook the chicken, preheat the oven to 400 and prep a baking dish for nonstick (spray works best).
  • Cook the chicken for35-40 minutes or until no longer pink and juices are clear. Serve as soon as possible.

Recipe Notes

I mentioned that this is an easy recipe with simple ingredients.
Also, for chicken to be safe for consumption it should reach an internal temperature of 165 f and not have any signs of pink in it.
This recipe works best with boneless and skinless chicken breast.
Pounding the chicken is one way to get uniform in size chicken which will help achieve uniform cooking. If desired, you can cut the chicken into smaller pieces.
