Ingredients

  • Flour– 2 ½ tablespoons all purpose.Use Whole Wheat Flour to keep this Mediterranean Diet Friendly.
  • Baking Powder– ½ teaspoon.
  • Butter- ½ stick. Use ½ cup of plant oil to keep this Mediterranean Diet Friendly.
  • Semi Sweet Chocolate Chips– ½ cup.Use unsweetened chocolate chips to keep this Mediterranean Diet Friendly. .
  • Unsweetened or Baking Chocolate – 1 ounce ¼th of a 4 ounce bar.
  • Egg-1.
  • Vanilla Extract– 1 teaspoon.
  • Sugar – ¼ cup. Omit or use a natural sugar alternative to keep this friendly for Mediterranean Diets.
  • Optional- Instant Espresso Powder– 1 teaspoon. This brings out the taste of the chocolate.
  • Optional- chopped nuts- ¼ cup.

Instructions

  • Start by sifting or whisking together the flour and the baking powder in a small bowl. Set the bowl aside.
  • Next, we are going to melt both of the chocolates (semi sweet chips and baking chocolate bar) with the butter. You can do this on the stove (double boiler recommended) or in a microwave. If you are using the microwave method, be sure to use a microwave safe bowl or cup. Stop the microwave every 30 seconds to stir. Microwave until the butter and chocolates are melted together. You can stir in the optional Instant Espresso Powder at this point as well. Allow this to cool for 10-15 minutes while you continue to work.
  • Preheat your oven to 350 and lightly spraying your skillet with nonstick.
  • In a mixing bowl, gently stir the egg with the vanilla and the sugar.
  • Add the flour mixture from the first bowl to the egg mixture from the last step. Gently stir these together.
  • If your chocolate has sufficiently cooled, ie it is cool to touch yet still soft, you can blend it into the mixing bowl with the other ingredients.
  • Transfer the mix to your skillet(s) and top with any optional chopped nuts. Bake your skillet brownie cakes for 20-25 minutes or until a toothpick comes out almost clean- do not over bake.

Recipe Notes

Use a seasoned cast iron skillet to make this in.
I suggested earlier that if you are making this chocolate cake for two, simply use a 10 inch cast iron skillet such as this one. But, if you want to make this Chocolate Brownie Skillet Cake for two in individual skillets, you can opt to use two smaller cast iron skillets like one of these instead.
Omit sugar or use a natural sugar alternative to keep this friendly for Mediterranean Diets.
For butter alternative, use ½ cup of plant oil to keep this Mediterranean friendly.
Use unsweetened chocolate chips to keep this Mediterranean Diet Friendly.
