Crispy Chili Lime Chickpeas

Ingredients

  • Chickpeas– 2 cans 15-16 ounces. Rinsed and Dried.
  • Olive Oil– 2 tablespoons.
  • Smoked Paprika– ½ tablespoon.
  • Chili Lime Seasoning– ½ tablespoon.
  • Lime- ½ lime cut in half.

Instructions

  • Rinse and drain the chickpeas and towel pat them dry if you have not already.
  • Preheat the oven to 400. You will need a rimmed baking sheet which you can optionally give a quick spray of nonstick.
  • In a large mixing bowl, use a whisk or a fork to blend together the oil and the seasonings. Then toss the chickpeas in the ingredients, attempting to cover the chickpeas as much as possible.
  • Transfer the chickpeas to the baking pan and spread evenly.
  • Roast the chickpeas until they turn golden and are crunchy, It should take about 20 to 30 minutes. Be sure to stir the chickpeas or shake the pan every 10 minutes to assure that they bake evenly. Squeeze lime juice from the wedges over the chickpeas and serve.

Recipe Notes

As mentioned, I suggest draining the chickpeas and then rinsing them to help reduce sodium in the recipe. You can dry the chickpeas by patting them dry using a clean paper towel.
Also mentioned, the chickpeas should be baked until they are crisp.
The times for the chickpeas can differ. It is a good idea to stir the chickpeas every ten minutes while they bake to help insure that they baked evenly
