Vegan Puffed Rice Snack Bars

Ingredients

  • Puffed Rice Cereal– 3 cups.
  • Peanut Butter– 1 cup
  • Coconut Oil– ¼ cup.
  • Maple Syrup– ¼ cup.
  • Vanilla Extract– 1 teaspoon.
  • Vegan Chocolate Chips– 2 cups.
  • Coconut Oil– 1 tablespoon.

Instructions

  • Prepare a square baking dish with parchment paper that overhangs the edges of the dish.
  • Place the puffed rice cereal in a large mixing bowl.
  • Over low heat, combine the peanut butter, coconut oil, maple syrup, and vanilla extract in a saucepan. Stir constantly until the ingredients are blended together. Tip: Spray the saucepan with nonstick before adding the ingredients for easier clean up. Once the ingredients have blended remove the ingredients from the heat.
  • Pour half of the blended mixture over the puffed rice that is in the large mixing bowl. Stir the ingredients and then add the remaining peanut butter and maple syrup mixture. Once the ingredients are all well blended you can transfer this to the prepared baking dish.
  • Use a large spoon or your hands to press the mixture into the baking dish so that it is evenly distributed and compacted into place. Wetting your hands first or using parchment paper can make this an easier step. Refrigerate this for thirty minutes so that it can set in place.
  • Next, remove the bars from the refrigerator and make the topping. Melt the chocolate with remaining coconut oil in the microwave using a microwave safe bowl for 45 seconds.
    Stir this melted mixture, carefully handling it. Evenly pour the melted chocolate on top of the puffed rice, covering the entire puffed rice treat evenly.
  • Refrigerate for another 30 minutes or until the chocolate is hard.
    Cut it into bars and serve.

Recipe Notes

I mentioned that the ingredients that are listed are intended to be vegan.
Having said that, I urge to to read the labels on the ingredients that you use to ensure that they are fully vegan as well.
Also mentioned was that this recipe is made with peanut butter.
I suggest using an organic or natural peanut butter that has no added sugar in it. Organic and natural peanut butter usually has pure ingredients and no added sugar.
