Ingredients

  • Almond Milk– 3 cups.
  • Water- 1 cup.
  • White Rice– 1 cup uncooked.
  • Orange Zest– 2 ½ tablespoons.
  • Maple Syrup– ¼ cup.
  • Vanilla Extract– 1 teaspoon.
  • Ground Cinnamon- 1 teaspoon.

Instructions

  • In a saucepan over medium heat, combine together all of the listed ingredients and bring to a simmer. You can add the optional seasonings later as needed if desired. Stir that rice pudding to mix the ingredients as they cook and to also prevent scorching the pudding.
  • The rice pudding will be done when is begins to thicken. Please note that it will thicken more once it begins to cool. It is best to remove the rice pudding from the heat when it begins to thicken rather than waiting.
  • Serve warm or cool as desired. Leftovers can be refrigerated for a few days if covered.

Recipe Notes

I mentioned that this recipe calls for almond milk. I suggest using an unsweetened almond milk so that you can control the sweetness of this recipe. Alternative vegan milk that can be used include oat milk or cashew milk.
Also mentioned is that white rice works best in this recipe.
While you could use either a long grain or short grain white rice, I would avoid brown rice as it cooks differently. The rice should be uncooked for best results in this particular recipe.
