Easy Vegan Stuffed Avocado

Ingredients

  • Avocadoes- 3 ripe. The avocadoes should be cut in half lengthwise with the pits removed.
  • Cucumber- 1 cup chopped.
  • Celery- ⅓ cup chopped.
  • Tomato- ¾ cup chopped.
  • Red Onion- ½ cup chopped.
  • Vegan Mayonnaise- ½ cup.
  • Seasonings as desired. This can include Italian Seasonings Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

Instructions

  • Prepare the avocadoes as indicated in recipe post. Slice them in half on a cutting board from top to bottom and remove the pit. Place the avocadoes on a dish or similar space.
  • In a medium mixing bowl. Use a fork to mix together the cucumber, celery, and onion. The stir in the mayonnaise.
  • Scoop out a tablespoon of meat from each avocado half and stir that into the ingredients in the bowl as well. Season as desired.
  • Fill each avocado with the filling from the bowl and serve.
  • For best results, eat the stuffed avocadoes while fresh, otherwise avocado would turn brown and look less appetizing.
  • Store uneaten stuffed avocadoes well wrapped in plastic for up to one day as it will begin to brown.

To test an avocado for ripeness, gently press on it and if the the avocado is soft yet, firm enough to hold its shape, it is just right for this recipe.
