Easy Vegan Peanut Butter Smoothie

Ingredients

  • Bananas- 2 cups of sliced and frozen bananas.
  • Coconut Milk– ½ cup.
  • Almond Milk– 1 cup
  • Vanilla Extract– 1 teaspoon.
  • Peanut Butter- 2 tablespoons.
  • Ice- 1 cup or as desired.

Instructions

  • For a more 'liquid' smoothie, add the ice first. However, for a thicker smoothie that is more like a shake, add the ice last so that you can have more control over it.
  • Place the frozen bananas in a blender with the milks (coconut and almond or alternatives), vanilla extract and the peanut butter. Optional ingredients such a vegan ice cream and vegan sweetener can go in here as well.
  • Blend until smooth, about a minute depending on your blender.
  • Add the ice and continue to blend to consistency. Smoothie consistency can be achieved in two to three minutes depending on your blender.
  • Refrigerate or freeze leftovers.

Recipe Notes

This recipe gets its flavor and texture from using frozen bananas.
I suggest using a firm banana and slicing it before freezing it is an easy way to do this.
Mentioned was that there are options for alternatives to regular dairy milk.
Coconut milk is a good choice because it has a good texture and offers a lot of flavor.
Adding a nut milk, such as almond milk, helps to thin out the smoothie when the ingredients get too thick.
