Ingredients

  • Strawberries- ½ cup.
  • Blackberries- ½ cup.
  • Blueberries- ½ cup.
  • Sugar– ¼ cup divided.
  • Cornstarch– 1 tablespoon.
  • Lemon Zest– 2 teaspoons.
  • Prepackaged refrigerated pie crusts such as Pillsbury pie crust. You will need two.
  • Egg- 1. The egg should be beaten.

Instructions

  • Preheat the oven to 375F and line a baking sheet with parchment paper.
  • Place the berries into a large mixing bowl. Then in a smaller bowl use a whisk or a fork to combine together t tablespoons of the sugar with the cornstarch and lemon zest. Gently toss the ingredients from the small bowl with the fruit in the large bowl.
  • Unroll the pie crusts on to a lightly floured cutting board or work surface. Then use a four inch cookie cutter to cut out the circles. Place the cut out circles on to the lined cookie sheet.
  • Use a tablespoon to fill the center of each cut out circle with the berry mixture from the large bowl. Be sure to leave a half inch from the edges of each circle free of added ingredients.
  • Fold the crust edge up to cover the fruit, creating pleats. Be careful not to tear the crust while you are creating the pleats.
  • Brush the edges of each galette with the beaten egg and then sprinkle the remaining sugar over the brushed on egg.
  • Bake the galettes until the crust turns golden brown and the fruit bubbles. This should take about 20 minutes.
  • Store in an airtight container in the fridge for up to 3 days.

Recipe Notes

This recipe is easy because the ingredients are so simple.
Using a premade refrigerated pie crust that can be rolled out is essential to this recipe.
Making this recipe on parchment paper is a good idea.
Parchment paper will allow for easy transfer of the galette throughout the process.
You will also need a 4 inch cookie cutter to cut out the individual galettes.
