Easy Zucchini Salad

Ingredients

  • Dressing- as prepared in recipe post.
  • Zucchini- 3 medium sized in ribbons.
  • Arugula or Spring Salad- ¾ cup
  • Corn kernels– ½ cup .
  • Feta Cheese- ½ cup.
  • Walnuts s– ¼ cup.

Instructions

  • Prepare the dressing as indicated. Shave in a mandolin or thinly peel using a vegetable peeler, the zucchini. The strips should resemble ribbons. Place the zucchini into a large serving bowl.
  • Add the arugula or lettuce to the bowl. Then drain the corn and add it to the bowl.
  • Drizzle the dressing over the ingredients in the bowl and toss until the ingredients are coated. You can add additional seasonings as needed to taste.
  • Top the salad with the remaining ingredients and serve.
