Optional- chopped nuts such as walnuts mixed in or brown sugar (3 tablespoons) and cinnamon (1 teaspoon) for a topping.
Instructions
Preheat the oven to 350 and prep a muffin pan well for nonstick. In a medium bowl, use a whisk or a fork to mix together the flour, cinnamon, cardamom, baking powder, and baking soda. Next, in a mixing bowl, beat together the applesauce with the brown sugar until blended. Then add the almond milk and the vanilla extract. Stir this until blended. Then stir in the dry ingredients from the first bowl to the mixing bowl, stirring until just blended. Lastly, fold in the apple chunks and any optional nuts.
Top with optional cinnamon sugar and then bake the muffins for 20 to 22 minutes, or until an inserted toothpick comes out clean. Remove the muffins from the oven and allow them to cool to room temperature for 10 minutes before removing them from the muffin pan.
