Vegan Meatloaf with Lentils

Seasonings as desired, tomato glaze as per recipe post.

    Instructions

    • Prepare a loaf pan with parchment paper or method of choice. Make the vegan egg by whisking together the flaxseed with the water. Set the vegan egg aside. Heat the olive oil in a saucepan on medium heat for two minutes.
      Add the garlic to the pan and heat for two minutes, stirring as needed. Then add the onion and carrots and cook for another four to five minutes or until the onion becomes translucent. Remove this from the heat

    • Preheat the oven to 350. Transfer the the sautéed ingredients to a food processor or large mixing bowl (using an immersion blender). Add two cups of the cooked lentils and process until combined and paste is formed. Then mix in the chopped walnuts. Place the mixed ingredients in a large bowl and stir in the remaining ingredients (remaining lentils, breadcrumbs, flaxseed egg, vinegar, soy sauce and seasonings as desired). When you are able for form the mixture into a shape, press it into the prepared loaf pan.
      Top the meatloaf with the glaze and bake for 35-40 minutes or until the edges begin to brown. Allow to set for at least five minutes before serving.
