Ingredients

Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Salt, and/or Pepper.

    Instructions

    • Start by preheating the oven to 400 and prepping a rimmed baking sheet for nonstick. You can use the olive oil to do this. In a large mixing bowl, beat the egg using a whisk or a fork.
      Then mix in the breadcrumbs, cheeses, basil, and seasonings.
    • Work the ground chicken into the mixture in the bowl. I really like to use my hands to do this as it is just easier to do and everything gets well blended. You can drizzle oil over your hands to keep the mixture from sticking too much.
      When you are able to form balls, about about the size of a golf ball, place the balls onto the prepped baking sheet. Then drizzle olive oil over the meatballs so that they are covered as this will help them from a more crisp outside.
    • Bake the meatballs for 20-22 minutes, or until the internal temperature registers 165F on an instant read thermometer. You can serve the chicken meatballs with sauce or as desired
