Vegan Lemon Garlic Pasta

Vegan Lemon Garlic Pasta, delicious creamy one pan version of Pasta al Limone made with Linguine and fresh lemons.

Ingredients

  • 3 Garlic - minced or chopped
  • 4 tbsp Olive Oil
  • 5 tbsp Vegan Butter
  • 5 tbsp Lemon Juice
  • 4 tbsp Coconut Cream -see post for alternatives.

Pasta- one pound cooked such as linguine. Also, seasonings as desired as well as vegan parmesan for topping.

    Instructions

    • Make the pasta as directed on the packaging. When the pasta is done cooking you can drain it.
    • Meanwhile, in a large skillet on medium low heat, heat the vegan butter and olive oil along with the garlic. Sauté the garlic until it becomes fragrant, about a minute.
      Stir in the lemon juice and the vegan double cream. Increase the heat to medium and cook for another minute, stirring continuously.
    • Add the cooked pasta to the skillet and stir the ingredients so that the pasta gets well combined with the sauce. This step should take about two to three minutes. You can add any optional seasonings as desired.
    • Serve the pasta with toppings of your choice such as vegan parmesan.
