Cantaloupe and Strawberry Summer Salad

Ingredients

  • 4 cups Arugula
  • 2 ½ cups Cantaloupe
  • 1 cup Strawberries
  • 1 Cucumber
  • 2 Radishes
  • 1 ½ tbsp Olive Oil

Herbs and seasonings as desired. My salad has chopped basil and mint.

    Instructions

    • Place the arugula on the bottom of a large salad serving bowl. Spread the lettuce out evenly so that it covers the entire bottom and some of the sides of the bowl.
    • Next, place the prepared ingredients (cantaloupe, strawberries, cucumber, and radishes) on top of the arugula.
      Add the olive oil to the bowl and toss the ingredients.
    • Sprinkle the quinoa over the salad. Then add any optional herbs and seasonings.
    • Refrigerate the salad for ten minutes to allow the ingredients to blend and then serve.
