No Bake Vegan Key Lime Bars,

No Bake Vegan Key Lime Bars, a simple dessert recipe that is vegan, vegetarian, gluten free, and low carbohydrate diet friendly.

Ingredients

  • ½ cup Dates
  • 1 cup Almonds
  • ½ cup Shredded Coconut
  • 4 tbsp Lime Juice
  • 2 tsp Stevia
  • 2 tsp Vanilla
  • 3 tbsp Coconut Oil
  • 2 cups Cashews

Instructions

  • To make the crust layer, pulse your almonds in a blender or food processor to ground them. Then add the dates and the shredded coconut.
    Continue to pulse until you get a grainy but, sticky mixture.
    Press the mixture into a prepared square pan.
  • To make the filling combine together the softened cashews, lime juice, stevia, vanilla extract, coconut oil, and canned coconut milk in a food processor or blender and pulse until completely smooth.
  • Evenly spread the filling over the base that is in the pan. Refrigerate until set (about three hours) before serving.
