Ingredients

  • 2 tbsp Flax Seeds
  • ¼ cup Water -warm
  • 2 ¼ cups Flour
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • ½ tsp Nutmeg
  • ¼ tsp Cloves
  • 1 ½ tsp Ginger
  • ½ cup Bananas - mashed
  • ¼ cup Molasses -dark
  • ¼ cup Brown Sugar
  • ¼ cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • cup Almond Milk- Unsweetened

Instructions

  • Preheat your oven to 350F and line a 9×5 loaf pan with parchment paper. Spray it lightly with non-stick baking spray.
  • Prepare the flax egg by by combining the flax seeds with warm water as it will need about five minutes to thicken up.
  • In a medium bowl, use a whisk to mix together the flour, baking powder, cinnamon, ginger, nutmeg, ginger, and cloves.
  • Next, in a mixing bowl, beat together the mashed bananas, molasses, brown sugar, and vegetable oil until blended.
    Then add the flax egg from the second step along with the vanilla extract.
  • For the next step we will add the dry ingredients from the first bowl to the mixing bowl with the other ingredients. Do this by adding half of the dry ingredients, gently stir, and then stir in the milk.
    Add the remaining dry ingredients and mix until just combined.
  • Bake the loaf for 40-45 minutes or until a toothpick inserted into the center of the loaf comes out clean.
    Allow the loaf to site for ten minutes in the loaf pan before transferring it to a wire rack to finish cooling.
