Peanut Butter Stuffed Dates Recipe

Ingredients

  • 16 Medjool Dates
  • cup Peanut Butter - no added sugar
  • 1 cup Chocolate Chips -vegan

Toppings: includes coconut flakes, chopped nuts, crunchy cereal, chopped pretzels, kosher or sea salt, or even vegan caramel.

    Instructions

    • Line a rimmed baking sheet with parchment paper or wax paper.
    • To prepare your dates, select days that is good shape and are large enough to hold a teaspoon of peanut butter.
      Carefully slice each date from top to bottom about halfway to two thirds of the way through. Remove the pits and place each of the dates on to the prepared baking sheet.
    • Use a teaspoon to fill each of the dates with peanut butter.
    • Add any extra add on ingredients to the peanut butter center.
    • Next, melt the chocolate according to the directions on the packaging.
      Use a spoon, fork or dipping tools to dip the bottoms and sides of each of the dates into the melted chocolate. You can also drizzle additional chocolate over the top of the dates.
    • Place the dates into your refrigerator (three to four hours) or freezer (about an hour) to set.
