Ingredients

  • 3 tbsp Flax Seeds - see post for details and alternatives.
  • 3 tbsp Hot Water
  • 1 cup Flour
  • ½ tsp Baking Soda
  • ½ cup Unsweetened Cocoa Powder
  • 1 cup Brown Sugar
  • ¾ cup Vegetable Oil - see post for details and alternatives.
  • 2 tsp Vanilla Extract
  • ½ cup Coffee - see post for details and alternatives.
  • ¾ cup Chocolate Chips - vegan

Instructions

  • Preheat your oven and prep a loaf pan for nonstick.
    Prepare you vegan egg by mixing together the flax seeds with the hot water. Set this bowl aside for about five minutes or until a get forms.
  • Meanwhile, in a medium bowl, use a whisk to mix together the flour, unsweetened cocoa powder and the baking soda.
  • Next, in a mixing bowl, beat together the oil with the brown sugar until combined. Add the vegan egg, coffee, and vanilla to the bowl and mix until just combined.
    Then add the dry ingredients and mix until just combined.
    Lastly, fold in the chocolate chips.
  • Evenly distribute the ingredients in your prepared loaf pan and bake for 55-60 minutes. If you are using the toothpick test, do so in more than one location on the loaf as the melting chocolate chips can give you a false result.
  • Allow the loaf cake to sit in the pan before transferring to a cooling rack to finish cooling.
