Equipment

Ingredients

  • 2 Chicken Breasts
  • ½ tbsp Olive Oil
  • 3 tsp Seasonings - my chicken was made with garlic powder, pepper, and Italian seasonings (1 tsp).
  • 2 slices Mozzarella Cheese
  • 1 Tomato - sliced

For Glaze

Optional Marinade

Instructions

  • Prepare the chicken as directed (pat dry if needed and make the slits).
If you are marinating the chicken, place it into a zip top bag and with the marinade ingredients and refrigerate for up to one day in advance
  • Drizzle or coat the chicken breasts with the olive oil.
You can also brush or spray the air fryer basket with the oil.
Note that if you are using marinated chicken breasts, you do not need to coat them with the oil.
Instead, remove the chicken from the bag and dispose of the bag and its contents.
  • Preheat your air fryer to 350 and let it get to temperature (about five to six minutes).
  • To cook the chicken breasts, place them into the fryer basket and cook until they reach 165 degrees internally and they should no longer be pink.
Also, flip the chicken over about five minutes into air frying.
It should take about 10-12 minutes total to cook.
  • Stuff the chicken slits with the tomato slices and the cheese and then return the chicken to your air fryer for about another two minutes for the cheese to melt
  • To make the balsamic glaze, simply heat balsamic vinegar and brown sugar in a pan over medium heat bringing it to a boil. Once the mixture has boiled you can bring it to a simmer until it has reduced to about half.
Allow the glaze to cool before drizzling it over your chicken.
  • Serve the chicken breasts with the balsamic glaze drizzled on top.
