Easy Homemade Blueberry Cobbler

This delicious recipe for EASY BLUEBERRY COBBLER is friendly to the Mediterranean Diet and is sure to please as a yummy dessert!

Ingredients

  • Blueberries- 2 cups. Fresh blueberries are preferred.
  • Whole Milk- 1 ½ cups. Feel free to substitute in whipping cream condensed milk, vegan milk or a combination of any of these.
  • whole wheat self rising flour– 1 ¼ cups. However you could simply use regular self-rising flour if you prefer to.
  • Butter- ½ cup melted 1 stick.
  • Sugar- ⅓ cup. If using an alternative please use the equivalent to ⅓ cup of sugar of that alternative.

Instructions

  • Preheat your oven to 350 and prep your baking dish or cast iron skillet for nonstick.
  • Place half of the blueberries in your baking dish or skillet.
  • In a mixing bowl, mix together the milk, flour, and butter.Then pour the batter over the blueberries.
  • Top this with the remaining blueberries and then sprinkle the sugar over the top.
  • Bake this for 30-35 minutes or until it begins to brown. Allow it to cool before serving. Baking time can differ depending on what you are baking your cobbler in. For best results, bake this in the center of your oven.

Recipe Notes

Instead of using a basic self rising flour, we will use a whole wheat self rising flour in order to make this recipe even more friendly to the Mediterranean diet. Look for “Wholemeal” flour if you are unsure of self rising whole wheat flour. However, you could simply use regular self-rising flour
