Mediterranean Diet Lemon Pepper Salmon

This simple and delicious recipe for Mediterranean Diet Lemon Pepper Salmon is also low in carbohydrates and gluten free.

Ingredients

  • Salmon Fillets– one pound with the skins removed.
  • Olive Oil – 1 tablespoon.
  • Lemon Pepper Seasoning – ½ tablespoon.
  • Lemon Juice– up to 1 tablespoon or as desired- this is an optional ingredient.
  • Sliced Lemon- as desired also optional.

Instructions

  • Preheat your oven to 400. Prep your glass baking dish with aluminum foil. I like to give my foil a quick spray with nonstick as well.
  • Places your salmon into the prepped baking dish. You can slice it up before you do if needed to make individual servings.
  • In a small mixing bowl , whisk together the oil and seasoning.
  • Pour the whisked together ingredients over the salmon. You can use a brush to distribute it over the salmon and even the underside if desired.
  • Lightly seal up the foil and place the salmon into the oven. Bake for five minutes and open up the foil. Continue baking for another 7-10 minutes or until the salmon can be flaked. You can place the sliced lemon or lemon juice on top of the salmon when you open up the foil or just before serving.

Recipe Notes

As mentioned, this recipe is made in a, aluminum foil lined glass baking dish. I also gave an option for alternatively using an ovenproof skillet.

I also mentioned that we are using a lemon pepper seasoning in this recipe.

This is a seasoning that you can make yourself or buy it already made. Look for a lemon pepper seasoning that does not have salt added to it. The lemon and the pepper really give this salmon all of the seasoning it needs.
