Vegan Udon Noodle Stir Fry

This delicious and easy Vegan Udon Noodle Stir Fry is friendly to the Mediterranean diet and takes under 15 minutes to make.

Ingredients

  • Canola oil– 1-2 teaspoons. Can sub in peanut oil or flaxseed oil or similar oils.
  • Soy Sauce– 2 tablespoons. Low Sodium Soy Sauce is okay to use. Feel free to use additional as needed.
  • Bok Choy- 2 cups chopped. Feel free to sub in a similar cabbage.
  • Shitake Mushrooms- ¼ pound stemed and sliced.
  • Peppers- 2 red sliced.
  • Scallions- 2. Sliced.
  • Ginger– 2 teaspoons grated.
  • Udon noodles – 1 pound. This is 14-16 ounces depending on the packaging usually 7-8 ounces per package, so you will need two.
  • Sesame Seeds– as needed for topping.

Instructions

  • Prepare your vegetables by cleaning them and slicing or chopping them as needed for this recipe.
  • In a skillet or stir fry pan, preheat your pan with the oil on medium heat.
  • Add the soy sauce and then the bok choy to the skillet and cook until it begins to look tender (3-4 minutes).
  • Next, stir in the mushrooms, peppers, scallions, and ginger. If needed, you can add a bit more oil as desired. Cook for 2-3 minutes or until the vegetables appear to be tender.
  • Meanwhile, bring a pot of water to boil for the noodles. Once the pot begins to boil add the noodles and swish rather than stir them to keep them from sticking. Allow the noodles to stay in the water for one minute and then drain the noodles.
  • Toss the noodles with the other ingredients and serve with the sesame seeds on top.

Recipe Notes

I mentioned that you may want to check the packaging on your Udon noodles to make sure that they are vegan udon noodles, made without eggs. Also, I mentioned that preparing the noodles to add to the stir fry is a simple process that calls for adding the noodles to boiling water for about a minute.

I also mentioned that you do not have to make this in an actual stir fry pan.

While you could look more authentic or knowledgable if you use a stir fry pan to make a stir fry (makes sense right?). However, if all you have is a skillet to make a stir fry in then I say go for it! You will find that a skillet may be easier to cook in and that you will need less oil to cook your food in because of the shape of the skillet.
