Ingredients

  • Almonds– 1 cup raw.
  • Water 2-3 cups. The amount of water that you use to make your milk should have something to do with the desired consistency of your milk. You will need additional water for soaking your almonds.
  • Optional- sweetener as needed. Honey agave syrup or even sugar can be used.

Instructions

  • As mentioned above, to soak your almonds, you will need a large bowl and enough warm water to cover the nuts. Simply place the almonds in the bowl and cover them with warm water overnight or up to two days at room temperature with a towel or cover over the bowl. Then drain and rinse the almonds in cold water before allowing them to dry out on a clean towel or paper towel for about twenty minutes. Discard the soaking water.
  • Place your mesh bag or cheesecloth over a bowl or large measuring cup.
  • When you are ready to make your almond milk, simply place the almonds and the 2-3 cups of fresh water into the blender or food processor.
  • Blend on high for two minutes. Stop the blender/processor and scrape the sides as needed to help break up any clumps.
  • Continue to blend on high until a fine meal forms and the water turns to a light color (white). This blending or processing will take about four minutes total.
  • Transfer the processed or blended ingredients to the prepared mesh bag or cheesecloth covered bowl or measuring cup. To facilitate the draining you may need to manipulate the bag or cloth to squeeze out the milk.
  • Save the almond meal that remains in the drainer for later use.
  • To sweeten your milk or add flavoring, simply add the strained milk and ingredient to a clean blender and blend.

Recipe Notes

As mentioned, a big part of making homemade almond milk is soaking your almonds as it is done to facilitate the removal of the skins and soften the nut so that the almonds can be ground up to make the milk and meal.
There are also digestive benefits for soaking almonds that are not necessarily related to this recipe.
