Tofu– 1 package or block12-14 ounce. Use a firm or extra firm tofu. If you will be grilling this on a grill, I suggest not going with a silked tofu product. Prepare your tofu as indicated above (pressed and drained).
Olive Oil– 1 tablespoon.
Taco Seasoning- 1 ouncea typical package or 2 tablespoons. You can use taco seasoning already prepared. You can opt to use a low sodium version of a taco seasoning
Corn– 1 candrained. Canned corn is usually 14-15 ounces.
Diced Tomatoes– 1 can12-14 ounces drained. I like the diced tomatoes that are canned with other ingredients such as garlic and basil.
Tortillas– 12depending on size. My homemade pita bread would work with this recipe too.
Optional-cilantrochopped avocado, chili peppers, salsa, and/or lettuce.
Instructions
Start by preparing your tofu as indicated above. This means pressing and draining it for fifteen to twenty minutes.
If you are making this recipe in a skillet on the stove, you can cut your tofu into cubes. Otherwise, you can cook the tofu first and the cut or crumble it as desired.
Set the prepared tofu in a shallow bowl. In a small bowl, use a whisk or a folk to blend together the oil and the seasoning. The brush or pour the oil and seasoning mixture over the tofu, flipping the tofu over to assure that both sides get covered. Allow the tofu to sit for about 10 to 15 minutes in the marinade.
When you are ready to make your tofu, prepare your skillet for nonstick by using an additional bit of oil or nonstick spray. Preheat to medium high. Meanwhile, you can cook the corn as desired.
Transfer the tofu to the heated skillet and cook for five to six minutes or until it begins to get crisp. Flip the tofu and cook until done.
When the tofu is done cooking you can cut it into chunks or crumble it up. The use the remaining ingredients and any optional ingredients to assemble your tofu tacos.
Recipe Notes
I mentioned above to prepare your tofu you will need to press and drain it. This is an easy process. To press and drain your tofu simply place it on top of a few paper towels or clean kitchen towel. Then top this with more paper towels or another clean kitchen towel. Place something heavy on top of the tofu and allow it to sit for fifteen to twenty minutes. I also mentioned that this recipe can be made on a grill or in a skillet on the stove. If you are making this recipe on a grill, I suggest that you make sure that you are using a firm or extra firm tofu that is not silken if you are using a grill to make this recipe.Silken tofu is a softer tofu that tends to not hold up as well when cooked on a grill (which is why silken works great in smoothies, dips, and dressings ).Also, it is best to use a grilling pan or similar item rather than placing the tofu right onto the grill grates as tofu tends to get sticky.
