Ingredients

  • Olive Oil– ¼ cup plus additional for cooking.
  • Lemon Juice– ¼ cup.
  • Garlic– 3 cloves minced about three teaspoons.
  • Greek Seasoning– 1 ½ tablespoons or ½ tbsp of thyme, rosemary, and oregano.
  • Salt and pepper as desired.
  • Chicken- 1 pound.

Instructions

  • In a small mixing bowl, use a whisk or a fork to blend together the olive oil, lemon juice, garlic, and seasonings. Add any additional seasonings such as salt and pepper to taste.
  • I like to marinate chicken or meat using a zip top bag. Simply place the chicken into the bag and toss the chicken in the seasoning blend from the bowl by pouring the bowl contents over the chicken. Place the chicken into the refrigerator for at least two hours (or overnight) to marinate.
  • When you are ready to cook your chicken preheat a large skillet with two teaspoons of oil on medium heat.
  • Remove the chicken from the marinade and dispose of the marinade as this cannot be reused. Cook the chicken until it is no longer pink inside, about ten minutes.

Recipe Notes

I mentioned that an easy cheat for this recipe is to use Greek Seasoning already blended for you in a bottle online. Simply use between two and three tablespoons and omit the other seasonings that are already in the blend.
This recipe also works well on a grill. To grill this chicken be sure to first pre-treat the grates for nonstick on grill for 10-15 minutes on each side or until the chicken is no longer pink.
