Prepare the green beans if they have not been prepared. I like to rinse mine in running water and remove the ends. Then pat the green beans dry using a paper towel or clean kitchen towel.
Preheat the oven to 400. Prep a rimmed baking sheet with with nonstick.
In a large bowl, toss the green beans in the olive oil, garlic, zest and any desired seasonings.
Transfer the green beans to the prepared baking sheet, spreading them out evenly avoiding any overlap.
Bake the green beans until they begin to brown, moving them around as needed to promote even roasting. They should be ready in twenty minutes.
Serve with lemon, squeezing juice as desired as well as adding additional seasonings.
Recipe Notes
I mentioned that this recipe works best with fresh green beans. To prepare the green beans simply wash or rinse them and remove the rough ends. I also mentioned that this recipe can be modified. You could make this recipe using fresh asparagus or even peapods. Using a combination of these vegetables is another great option for yo to try.*Please check the nutritional labels to assure that you are sticking to your diet restrictions for any substitutions used.- see post for alternatives Please see recipe post for further details on this recipe.
