Mediterranean Diet Feta and Pepper Dip

Ingredients

  • Feta Cheese- 1 cup.
  • Ricotta Cheese-1 cup.
  • Garlic- 2 cloves minced or chopped.
  • Red Peppers- ½ cup roasted and chopped.
  • Seasonings as desired.

Instructions

  • This recipe can be made in a food processor or in strong blender such as a Vitamix blender.
  • Gently pulse the feta cheese in the food processor or blender to break up the chunks. Then add the ricotta cheese, garlic , and peppers and pulse until you reach your desired consistency, seasoning as desired.
  • Store this dip for at least and hour if not overnight in a covered bowl or similar container in the refrigerator before serving.
  • Serve with vegetables, chips, or even crackers. This dip should keep for up to a week if properly stored in the refrigerator.

Recipe Notes

I mentioned that this dip can easily be served with vegetables or crackers. Also mentioned was that non-fat Greek yogurt can be used in place of some of the ricotta cheese in order to thin out the dip (especially nice for making this into more of sauce).
Also mentioned was how to balance out this flavors if needed.
Adding a bit of lemon juice (1 tsp) to this recipe can help balance out the flavors in this recipe. As can adding up to a teaspoon of chili paste.
