Ingredients

  • Sweet Potatoes- 3.
  • Honey– 3 tablespoons.
  • Greek Yogurt- ¼ cup.
  • Ground Cinnamon– ½ teaspoon.

Instructions

  • Prepare your potatoes as described above. I prefer baking sweet potatoes in this recipe. Pierce each potato a few times with a fork and then place the potato on to a baking sheet.
    Bake the potatoes at 374 for 90 minutes or until soft then allow them to cool before peeling.
  • Place the baked and peeled potatoes into a large mixing bowl. Give them a quick mash to make it easier to blend the remaining ingredients.
  • Add the remaining ingredients to the bowl and blend or mash (depending on your method) until you reach your desired texture. You can adjust the flavor and texture as desired by adding optional ingredients.
  • Top the honey mashed sweet potatoes as desired and serve.

Recipe Notes

I mentioned, if you are pressed for time, microwaving your sweet potatoes is an option. Also, I prefer not to boil sweet potatoes for this recipe as they tend to absorb water which can affect the results of the mashed sweet potatoes.
Also, there are ways to personalize your honey mashed sweet potatoes.
Adding extra ingredients to the mashed sweet potatoes before serving can be a fun idea. Chopped walnuts, drizzled maple syrup on top, or seasonings such as pumpkin pie spice are ideas.
