Mediterranean Diet Apple and Walnut Cake

Ingredients

  • Apples- 4 cups peeled cored, and chopped.
  • All Purpose Flour- 2 cups.
  • Baking Soda– 2 teaspoons.
  • Ground Cinnamon– 1 ½ teaspoons.
  • Ground Nutmeg– ½ teaspoon.
  • Sugar– 1 ½ cups. S
  • Canola Oil- 1 ½ cups.
  • Eggs- 2. Feel
  • Vanilla Extract– 1 teaspoon.
  • Chopped Walnuts- 1 cup.

Instructions

  • Prepare the apples by removing the skin and the core and slicing into chunks.
  • Preheat the oven to 350 and prep a baking pan for nonstick. Lining with parchment paper works well.
  • Use a whisk or sifter to sift together the flour, baking soda, ground cinnamon and ground nutmeg. Set this bowl aside.
  • Next, in a mixing bowl, beat together the sugar and the oil.
  • Add the flour mixture from the first bowl along with the eggs and vanilla extract to the second bowl with the sugar mixture. Mix until just blended. Then fold in the chopped walnutes.
  • Bake for 45 to 50 minutes or until a toothpick comes out clean. Allow the cake to cool on a rack.

Recipe Notes

I mentioned that that using more than one kind of apple can make this cake taste more interesting.
Also mentioned was that you can use alternatives to sugar to sweeten this cake.
Wash your apples in cool water and allow them to dry.
Use a vegetable peeler or apple peeler to remove the skin and then use an apple corer to remove the core. Then slice the apples into chunks or slices.
