Ingredients

  • Broccoli- 1 average sized head broken into florets. That is about two cups if you are using a prebagged version of broccoli easy hack!.
  • Tofu- one 10-12 ounce firm block. Have your tofu cut into bite sized pieces.
  • Olive oil- 2 tablespoons divided plus additional as needed. Balsamic Vinegar– 2 tablespoons.
  • Soy Sauce– 2 tablespoons.
  • Water- 2 tablespoons.
  • Chili Sauce– 1 tablespoon or as desired.
  • Garlic– 4 cloves minced. That is about four teaspoons. Mushrooms– 8 ounces sliced. That is 2 small four once cans. Peanuts– ½ cup chopped.

Instructions

  • Precook the broccoli slightly to prepare it for this recipe. Cook the broccoli in a steamer basket for 10 minutes or in boiling water for 5 minutes. The broccoli should not get totally pre-cooked before adding it to this recipe.
  • Remove the tofu from the wrap and cut it into bite sized pieces.
  • In a small bowl, whisk together the vinegar, soy sauce, water and chili sauce. Set this aside while you work.
  • Preheat a large skillet or stir fry wok pan with one tablespoon of the oil on medium high heat.
  • Stir in the garlic and cook for about 45 seconds then add the tofu and cook until it begins to brown (about five minutes). Please stir the ingredients in your pan as they are cooking hot and quickly.
  • Remove the tofu from the skillet and set aside. Add the remaining oil, the broccoli and the mushrooms to the skillet and continue to cook for another two minutes or until the ingredients are tender (stirring to keep the ingredients moving as needed).
  • Return the tofu to the skillet and stir to combine the ingredients. Then turn the heat off and stir in the chili sauce.
  • Plate the stir fry for serving and garnish with the peanuts before serving.

Recipe Notes

Here is how to prepare the tofu for this recipe.
Use a firm tofu in this recipe for best results. Remove the tofu from the wrapper and cut it into bite sized chunks (around 1" squares for example).
