Delicious Shaved Brussels Sprout Salad

Ingredients

  • Brussels Sprouts- 1 pound. Shaved or shredded.
  • Onion- 1 small red. Thinly slice the onions.
  • Radish- 1-3 sliced as desired.
  • Sprouts- ½ cup. Optional.
  • Dried Fruit- ⅓ cup.
  • Vinaigrette Dressing- ½ to 1 cup as needed.
  • Nuts- ⅓ cup.

Instructions

  • Prepare the brussels sprouts as indicated, shredding or shaving them. Then transfer the sprouts to a large bowl (or refrigerate them for up to two days in a sealed bag or air tight container).
  • Place the onion and radish into the large bowl with the brussels sprouts and give the ingredients a quick toss. You can add the optional sprouts as well. Then add the dried fruit.
  • Whisk the dressing until well blended and the drizzle about half of it over the salad. Toss the salad and then add additional dressing as needed.
  • Cover and refrigerate the salad for 20 minutes up to an hour.
  • Add the nuts to the bowl, give the ingredients a quick toss and serve. You can add cheese if desired.

Recipe Notes

I mentioned that I rinse and trim the brussels sprouts before shredding them for this recipe. To shred brussels sprouts, simply cut the sprouts in half and then slice the halves to create the shreds, using your hands as needed to separate the shreds.
I also shared a simple vinaigrette dressing for this salad.
Use a whisk to blend together the ingredients and then toss the the salad in it.
Honey (1 tablespoon) + Dijon Mustard (1 tablespoon, Maple syrup for vegans) + Vinegar (¼ cup) + Olive Oil (¾ cup). Feel free to adjust these ingredients or add seasonings as desired. You may not need all of the dressing for your salad as well.
