Ingredients

  • Walnuts– 1 cup shelled and halved or pieces. For the base layer. Coconut Oil– 1 tablespoon. For the base layer.
  • Maple Syrup– 1 tablespoon. For the base layer.
  • Berries- 1 cup. For the mixed berry layer.
  • Maple Syrup– 1 tablespoon. For the mixed berry layer.
  • Coconut Yogurt- 1 ½ cups. This is for the yogurt layer.
  • Vanilla Extract- 1 teaspoon also for the yogurt layer.

Instructions

  • Prepare the base layer as described above. Place the walnuts in a blender and pulse the nuts so they break apart and look like breadcrumbs. Then add the coconut oil and maple syrup and pulse again. Set this aside until assembling the parfait.
  • For the berry layer, in a blender, simply pulse together the one cup of berries and the one tablespoon of maple syrup until you get a consistency that resembles jam. For best results, clean the blender between steps.
  • Mix together the vegan yogurt with the vanilla extract for the yogurt layer.
  • To assemble each parfait, is a glass or parfait dish, press enough of the prepared nut base (about two tablespoons) into the bottom of each. Be careful not to press too hard as it could break the glass. You can use a spoon to help with this layer.
  • Add a similar amount of the yogurt (about two tablespoons) to the parfait and evenly spread it to cover all of the base.
  • Layer the fruit base over the yogurt and then cover the fruit with an additional layer of yogurt. You should have a total of four layers per parfait.
  • Top with additional berries or your choice of toppings and serve.
  • These parfaits should be stored in an air tight container in the refrigerator. They should keep for up to four days.

Recipe Notes

As mentioned, this parfait recipe has three layer layers that need to be made (yogurt layer is used twice). The base layer is on the bottom of the parfait is kind of like a crust on a pie as it is there to hold the other layers.
For the yogurt layer, you can use about any nondairy yogurt.
You can usually find vegan yogurt at a local grocery store, however, some folks like to learn how to make dairy-free yogurt instead. The last layer consist of fruit and maple syrup.
