Ingredients

  • Vodka- 1 liter.
  • Water- 1 ½ cups.
  • Lemons- 5.
  • Sugar– 2 cups.

Instructions

  • Prepare the lemons by washing them first. Then use a vegetable peeler to peel the skin. Cheat tip: Alternatively, you can quarter the lemons, and squeeze out as much of the juice as you can. Discard or refrigerate the juice for another use.
  • Pour the vodka into a clean large mason jar or another airtight glass jar.
  • Add the lemons to the jar and then seal the jar. Then place the jar a dark, cool place for at least five days or up to a month.
  • When you are ready to make the limoncello (after it has been in the cool dark location for at least five days), you can make the syrup. In a large pot, bring the water and the sugar to a boil. Allow the water to simmer, stirring as needed for the sugar to fully dissolved (about five minutes). Turn off the stove.
  • Allow the syrup to cool to room temperature. Meanwhile, drain the vodka into new jars that are clean removing the (use a funnel) lemon peels. Then transfer the cooled syrup the the jars with the vodka in them. Gently stir this to mix. You can use additional clean jars as needed for space, allowing for equal amounts to ingredients in each.
  • Close the jars to make them airtight. Chill the bottles in the refrigerator or freezer for at least four hours before serving.

Recipe Notes

Mentioned was that the lemons used in this recipe should be washed and then peeled.
Using a vegetable peeler works best when peeling a lemon
Also mentioned above was that vodka is an essential ingredient in this recipe.
This is because the vodka is used to transform the lemon peels into this lemony beverage.
The stronger the vodka the better when it comes to making a good limoncello.
