Asian Carrot Salad in Sesame Dressing

Ingredients

  • Carrots- 8 average sized carrots.
  • Sesame Dressing– ¼
  • Pistachios– ¼ cup chopped.
  • Coriander- ½ cup fresh and chopped.

Instructions

  • If you have not already done so, grate the carrots. Then transfer the carrots to a clean kitchen towel or small stack of paper towels to drain while you work. It should take only five to ten minutes to drain much of the water especially if you blot the carrots. You can even keep the water and not drain if you desire to.
  • Prepare the dressing as described above. Set the dressing aside.
  • In a large salad bowl, combine the grated carrots, nuts, and the coriander. Add the dressing and toss the ingredients together.
  • Serve immediately. You can top with additional ingredients as desired upon serving.
  • Leftover salad should be refrigerated in an air tight container.
  • Tip: If desired you can add a little heat, such as crushed chili pepper, Sambal Olek or other spicy sauce to your liking.
