Ingredients

  • Roma Tomatoes- 5 average sized.
  • Avocado- 1 firm .
  • Bocconcini Cheese- 1 cup.
  • Basil- ½ cup fresh leaves.
  • Olive Oil– 2 tablespoons divided.
  • Seasonings as desired. This can include Italian Seasonings Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

Instructions

  • If you have not done so, prepare the tomatoes for roasting by slicing them into quarters (Roma). Also, preheat a skillet on medium heat with a tablespoon of oil. When the skillet is warm, place the tomatoes, with the flat side down, on the skillet for roasting. Add any seasonings as desired. Cook the tomatoes for about five minutes and then flip them over for another two. Then remove them from the heat and allow the tomatoes to cool to room temperature.
  • Prepare the avocado by removing the skin and the pit. Then slice the avocado into bite-sized pieces.
  • To assemble the salad, in a large bowl, combine together the tomatoes, avocado, cheese and basil. Then toss with the remaining olive oil and seasonings as desired.
  • Serve immediately.

This salad should be served just after it has been made.
Also mentioned is that this salad uses olive oil as the wet ingredient.
By all means, if you prefer the balsamic vinegar as part of your Caprese salad, feel free sub in or drizzle over the salad your choice of a balsamic vinaigrette. However, you can use balsamic vinegar as well as any other clear vinegar or lemon juice.
